4 large, thick slices bread, at least a day old
1 cup cream or milk
1 tablespoon granulated sugar
¼ teaspoon salt
2 teaspoons canola oil
Whisk the eggs, milk, cream, sugar and salt in a large shallow dish, something like a rectangular baking dish. Add the bread, press it down and leave it to soak for at least 15 min and up to 2 hours.
Heat a large non-stick pan over medium. Add canola oil. Remove a slice of bread from the egg mixture and let just a little of the excess drip off. Carefully place into the pan, repeating with more bread until pan is full but there is still a little space around each slice (if the pan isn't big enough, do it in batches). Cook 3 min or until bottom is golden.
Flip, reduce heat to low and cook another 3 min or until springy when pressed gently. Serve immediately, drizzled with syrup.
