  Why we're drinking this
  Full marks to the folks at the brand-new Redstone Winery, where Moray Tawse and his team put quality first, time and time again. Biodynamic viticulture and the natural winemaking practices create wines of superb character and presence. Positioned on 38-acres of mineral-rich red clay and stony soils, this new winery is poised for greatness. One sip this Cabernet Franc will tell you why. You can taste the dedication to non-interventionist winemaking, the concentration and expression. Important, as well, is the winery’s location in one of the warmest regions around Beamsville, resulting in superb ripeness for this late-ripening variety.

  Tasting Note
  Heralded in Bordeaux and the Loire for its remarkable food-matching qualities, Cabernet Franc makes deeply charming wines with seemingly endless personalities. They can be great sippers or formidable powerhouses. The Redstone version lies on the elegant side of the scale, with a generous mouthfeel that begs to be savoured. At the same time, it’s got the structure to go with a serious feast. “Full-bodied, with firm tannins and lots of length,” notes Lindsay Groves. Zoltan Szabo calls it “textbook Cabernet Franc, with cranberry, currant, red plum and tobacco, along with herbaceous notes of sage and marjoram.”
