    Why we're drinking this
    It’s not often you find an Ontario white wine that was made to age. This wine is now six years old and it’s pure killer. It's flavour profile makes it the perfect winter wine. The 2011 was a cool year in Niagara, says Stratus winemaker JL Groux, which heightens a compound in grapes called flavonoids. These account for the intense gold colour of the wine, which will continue to intensify as the wine ages even further. At this point in its evolution, the tropical fruit flavours have taken on complex and spicy notes like cinnamon, clove, Christmas spice, and canned Mandarin orange. kwäf Taste Bud Lindsay Groves says the wine can easily age even further. You might want to buy some extras to try next Christmas. The full-bodied style, along with the complex spice notes, make these wines ideal matches for grilled meats and spicy foods. They can even pair well with red meats.

    Tasting note
    You’ve probably never tasted a white wine like this before. And what a treat… if you are open-minded. This is not a style that is currently available off-the-rack at the LCBO, nor at many wineries. This is advanced-school white winemaking for discerning palates. You’ll find floral and honey notes, canned Mandarin orange, spicy dried orange peel, cinnamon and clove, dried grass and lime. The oak—two years in barrel—is prominent but “elegant,” says Lindsay Groves. Stratus puts a lot of money and mindfulness into its oak and you will taste it here. It’s a medium- to full-bodied wine with beautiful structure and poise. Superb to drink on its own because it’s so interesting and delicious, but it can be a whole other harmonious experience with food. Spicy foods will work nicely, but also flavourful game like duck or quail with mushrooms or truffle. Try to match any of the exotic notes in the wine via herbs and spices. Have fun with it!
