Pairs with: Fatty grilled meats and vegetables, with lots of smoke and sauce.

Why we're drinking this
The way the Australians treat Shiraz—aka, Syrah in the rest of the world—is unique versus, say, the Rhone region of France or such New World areas as California or even Ontario. Penfolds is one of the top names in Aussie Shiraz, and offers consistent quality all the way up the price point ladder to ultra premium. This Hyland Shiraz offers a peek into their signature style for a very reasonable price. You get a lot of bang for your buck here—it’s worth investing in a few bottles to see how this wine evolves over time (if you’re into that sort of thing).

Tasting note
This is classic Shiraz with bursting spicy red and black fruit. There’s a lot of dark cherry and blackberry along with whiffs of mocha, licorice and characteristic pepper that really says “hey, we’re in Australia!” This is a young wine and, with a formidable 14.5% alcohol, it’s a bit of a brute. You can drink it now—the tannins are firm, though—or hold and enjoy as it mellows with a year or two (or more) of ageing.
