Why we’re drinking this
Because good sparkling wine is not a “want,” it is a “need.” Cava is not a privilege, it is a right. Bar none, Cava represents the best value in sparkling wine in the entire world. (No apologies to Prosecco, Italy’s cheapie bubbles, which is usually thin on flavour and aromas and heavy on acidity.) Cava, on the other hand, is crisp and refreshing, with more body and personality. It is made essentially in the same method as Champagne, though with less emphasis on toasty, nutty flavours and more of a fresh, fruity profile.

Tasting note
Cava is beautiful to behold, especially on a sunny lawn or patio. Use a nice, medium-sized white wine glass (please, no flutes) to better frame the lovely pale gold colour and let the bubbles fly. This wine has a nice, fine mousse—lots of tiny little bubbles (tiny = quality) whizzing up the glass. It has a light, fruity aroma of fresh citrus and pear, even a little peach if you sniff deep. There’s the merest touch of oak, a slight woody note that adds interest. This is lightweight Cava, but nonetheless entirely pleasurable. Quaff it!
