For Chocolate Lovers : Salted Mexican Spiced Chocolate Ganache Tart

Pondview has a chocolate tart recipe that we think it is the best one we have ever tried. The richness of the chocolate, topped with smooth, silky ganache. Your friends will think you turned into a fancy pastry chef! Pair this with Pondview Winery 2016 Riesling Icewine featured this week as an Exclusive offer.


Ganache Ingredients:

  • 1 cup 35% heavy cream
  • 8oz. semi-sweet chocolate
  • 1 tbsp. Vanilla extract
  • 1 tsp. Cinnamon
  • ¼- ⅛ tsp cayenne
  • -salt to dust the top of each tart
  • Any tart shells, prepared




Break chocolate into small pieces and place into a medium bowl along with cinnamon and cayenne powders. Heat cream to a simmer: just before it reaches the boiling point remove it from heat. Pour cream over chocolate spice mix. Stir well, until all chocolate is melted and spices are incorporated. Add butter and vanilla and stir until smooth. Spoon mixture into prepared tart shells. Allow to cool slightly, then top with a pinch of salt.
