    Why we're drinking this
    Here’s a Chardonnay that has tales to tell. It’s so good, you can’t quite peg the reason. But never mind, just take another sip and say “hot damn.” The grapes come from, in the words of winemaker Ross Wise, “the hot little spot” on the Beamsville Bench in Niagara. Fermentation was completed with natural yeasts. This is also known as “wild ferment” and means that instead of adding commercial yeasts to the juice, the winemaker relies on yeasts that occur naturally in the atmosphere and on the grapes. This results in more complexity and uniqueness in the wine. Look for layers of sweet baking spices, exotic fruit and a silky smooth texture. How good is it? The wine won silver at the 2016 Chardonnay du Monde in France, the first time Rosewood entered the annual global competition.

    Tasting note
    This is a pure, concentrated Chardonnay that is expressive, structured and full of character. Says sommelier Lindsay Groves: “A beautifully complex and elegant wild-ferment Chardonnay, with developed notes of sweet corn, citrus, quince, pineapple, nuts and cedar.” It’s dry, medium-bodied, with crisp acidity and has a lingering finish — everything in wonderful balance. It’s just a beauty. Food friendly and versatile with many dishes due to the judicious (read: light) use of oak. A very focused, expressive wine — a real eye (and mouth) opener.
