Why we're drinking thisNot only is Cabernet Franc the parent of Cabernet Sauvignon — and therefore deserving of more respect — it also grows and performs far better in the cool climate of Ontario that we love and cherish so much (along with more and more serious wine fans around the world). Cab Franc is one of the wines that Ontario does best, partly because we have the limestone soils in which it thrives, a trait we share with the Loire Valley where the grape is so venerated. We love Cab Franc on its own, where it’s personality can really shine, as opposed to blended with it’s progeny (Cab Sauv) or Merlot. Not to take anything away from Bordeaux blends. That’s just what we prefer. Cab Franc loves Ontario and we love Cab Franc. So everyone is happy. Oh, yeah, it’s also made by Tawse, hands down one of the finest wineries in the world, and organic too.
Tasting notePerfumed with an intriguing melding of fresh berries and earthy hints of tobacco and mushroom. Supple texture with generous fruit — blackberry, raspberry, blueberry and cassis. Intense and spicy, full-bodied, firm tannins. Complex and delicious — it’s so easy to just keep sipping away. This is a textbook profile of great Cab Franc, but with even more pronounced blue and black berry fruit along with just a touch of the savoury quality (blackberry leaves, as described by wine expert Oz Clarke) that is almost unique to Cab Franc. For a wine this intense and dramatic to also be such a joy to drink right now (even though it could age nicely another few years) is a tribute to winemaker Paul Pender. Though he’d probably say he just tried to stay out of its way and let it do its thing — apart from all the hand pruning, tending, and harvesting.
